How do I take off auto-rudder. How do I get a hud?

You're in the FS2004 Forum.

To take off auto rudder you have to go into the Settings/Realism/Flight Controls then untick the checkbox in front of Autorudder.

The HUD is only available with some aircraft - mainly fighter aircraft but there are exceptions. The best way to pull up the HUD is by holding down Shift while cycling through the numbers on top - 1 2 3 4 etc..
