In-flight aircraft jerks around and changes speed

When I am flying with any jet aircraft with the auto throttle and pilot heat on, my plane sometimes jerks violently to the side and changes speed by around 0.05 mach to 0.10 mach. Any help would be appreciated.

Next time you fly, select the data display. [press Shift-Z once] This gives you the first line of data, in red text, at the top of the screen. The end of this line shows the wind direction and speed. Then, when you experience the "violent jerking and speed drop" check to see if there was a sudden change in wind direction and speed. You can pause the flite and use instant replay to see what happened.
