How is one supposed to fly Sids/Stars in FSIM when flying IFR> What can I do to keep ATC from cancelling my flightplan?

In short, you can't. The default flight sim ATC is a little screwy with it's vectoring! At nearly every major airport you wont get vectors for approach until you are at the last point of the STAR in real life. FS seems to ignore that such a thing exists and starts giving you approach vectors when you are 80+ miles out!

So you can do one of two things, fly VFR and rely on your FMC / TCAS to carry most of the load the ATC would provide, or start flying on VATSIM 😉 .
