Interacting with Ground Vehicles

How come that when you are parked at the gate you can only interact with the baggage, fuel, and pushback vehicles when there are others like the fire truck, the food carts, and flatbed trucks that are around?

because those other vehicles are a bunch of snobs and think they are better than the airplanes, and consequently want nothing to do with them.
