I know that FSX without any SPs does not honor SLI or Crossfire. With SP1 and now SP2 installed, will it take advantage of SLI or Crossfire?

Yes it should.
I have mine set to the max resolution that my monitor will allow, 1920X1200.
I believe Phil Taylor said it should work at that resolution.
