Irradic Rudder Pedals

Very irradic, both on ground and in flight on FSX. By Saitek. Windows7 premium . Had all sorts of recommendations from Madcatz but nothing seems to help. Have updated the driver but still flops from side to side frequently. I'm at a loss at what to do.

Try plugging it into a different USB port on your computer.
I bet it's your joystick controller. I had a Saitek that I had to replace because it was causing this same issue.
