Is there any way to get an engine fire and use the fire extinguishers?

An engine fire????? That would be kinna cool.... Good reason for a death defying dive earthward.....lol

I wonder what would happen if you could simulate an engine falling off a 777 just after liftoff?

You really are looking for an adrenaline rush......I think I'll stay with the engine fire for now.
Like Ultimate Traffic, someone should develop Ultimate Emergency don't you think?
