I used to have fsx 2004 and a couple of Coca Cola livery aircraft that worked fine. Is there a way to install and run these same aircraft on a newer version of fsx?

Just install them the same ways as FS2004, but the main aircraft folder is different.. it is in Simobjects --> Airplanes instead of the FS22004 Aircraft folder.. gauges still go in the gauges folder, as with sounds and effects in their respective folders... on word of caution though.. FS98 era gauges will give you problems in FSX, if they even work at all, and propeller and jet fan discs will have a transperency issue, so if you spend a lot of time looking at the plane from the outside be prepared for some disappointment.. but the planes will still fly as good as they ever did..
