what is "request flight following" ive seen it in the atc window when im flying

You can have ATC assign you a squawk code and they will provide a watchful eye out over you.

I rarely fly VFR, but when I do, I always request it.

I don't know how it works in Sim but in the real world, flight following is, as the previous poster inferred, a VFR service by ATC where they issue you a discrete transponder code and will then call traffic conflicts for you. You remain VFR and follow all the VFR rules but you have the additional safety factor of traffic calls as if you were flying an IFR flight plan.

Flight following is on an ATC "workload permitting" basis so they do not have to accept a flight following request and, even if they do accept it, IFR workload still has priority so they may not call all of your conflicting traffic. It is still the PIC's responsibility to "see and avoid".
