I know that you have to use rudders to do this on the ground but the extra turns very fast and the dc3 turns slow. It it possible that you can change this in the aircraft.cfg?

Use the rudders and with the DC-3, "Shift+G" will unlock the tail wheel.
I always taxi with full flaps.

Why do you always taxi with full flaps?

Yes, I find the aircraft easier to turn that way, of course I fly GA not airliners.

use dif. braking aswell use the brakes when you are turning that helps to.
Yeah, but for the Extra 300S stunt plane, the plane turns really fast and when you stop it, you can hear one of the wings scraping on the ground. I wish there was an easier way to turn taildraggers. Some of them turn really fast, while others turn slow.
