Sounds awesome, only problem i see is the instrument procedure charts, because you have to usually buy those, and It's not too easy to get those. If you know where to get them, I'd go look though.

I've thought of doing something like what you're undertaking, but there's like no one in my area that would use flightsim😛

FEM if you want approach plates, SID's etc try http://naco.faa.gov/index.asp?xml=naco/online/d_tpp
Click on Digital-Terminal procedures and select the airport you want. I do not know if they are all there.
