I dont know why this happens but when I fly a twin engined aircraft and I engage autopilot for the heading and sometimes altitude, the aircrfat immediatly turns to left and/or right or climbs or descends suddenly.

This has happened to me in the default Beechcraft Kingair, Boeing 737, aswell as addon payware aircarft.

Please help me someone by telling me whats going wrong and how I can fix it!!!

The only thing I can think of is to engage the FD and see if autopilot is planning in drastic movements. If its centered, make sure you just engage the autopilot and then add heading, speed etc, making sure that they are the correct figures entered. Otherwise I don't really know what to suggest Dont Know Hope it helps 😉

Also, is there anyway of resetting the autopilot controls to neatral.

Like for the rudder controlls, you hit NUMPAD 5 to centre it...?
