Would someone mind explaining what anti-aliasing is and what options I should choose with regard to it in FS2004? Thanks...

The most common setting is AA 4 AF 16.
It all depends on the card you have and a few other variants of your system.
Set mip map in the settings section to 4 or 5, you basically want to get rid of the dreaded "jaggies".

Play around with the settings until you get what you want but don't check AA in the settings of the sim, do it all in the control panel of your card.
