when your flying do you use up the wing tanks first and then go center tank when there empty? or is the other way around?

Wing tanks then main. At least that the sequence on some that I remember.
Center tank, then wings. Use the fuel that needs to be pumped first, then the fuel that could (in case of an emergency) flow to the engines on its own because of gravity.
