First Officerthere is alway a mention of the menu screen but i've look all over for it but cant find it someone help me so i can record flights that i like

Chief Captainthe menu screen is...well, the menu screen: the first thing that comes up when you open flightsim.
to record a video you need a program, freeware wise most people use 'fraps'.
if you want to replay a landing and whatnot hit alt if in full screen mode and a menu will appear at the top, you can then click replay
