Is it as simple as deleting the fsx.cfg folder and restarting FSX?
I want to go back to the original settings since I downloaded Acceleration and start over.

Yes, except the fsx.cfg is NOT a folder. It's just a text file. Don't delete any folders.

FSX.CFG is a file, not a folder. You can just reset it by deleting it and restart FSX. FSX will build a new one when you restart.
FSX.CFG is located here in Vista C:\Users\[insert your user name here]AppData\Roaming\Microsoft\FSX . C:\ would depend on what drive Windows is installed on.
