I've been looking for the fsx config file to see about changing it for a duo core, but I can't find it under fsx.cfg. Does it go by another name?

Why do you want to mess with the fsx.cfg file for dual core?
Do a global search for it on your pc. From the start menu.
Try the fsx.cfg editor and finder:
