what file do you have to delete to get rid of the default ai traffic?

Don't delete them, work around it. If you delete then it could cause big problems.
Have a look at Projectai.com, they have default traffic removers, use them. You'll still have the default aircraft in your FS9/Aircraft folder but they won't show in the sim.
