What are the best settings for Sensitivity and Null Zone to make my Joystick acts like in a real airplane?

There is no one size fits all answer to that question. Sensitivity is what you feel is realistic. The null zone is to allow for different joy sticks that may not center as well as others and that could vary from joy stick to joystick even in the same brand.

The best answer I can give you is to go with what you feel comfortable with.
