1. You can't, windshield wipers aren't simulated in default aircraft.
2. You can't, you can turn on the smoke system in the Extra 300 but that's about it.

I agree, CRJ is right, but the wipers can be animated, so you might find it in some really good freeware.
Also, many other downloadable planes have smoke.
